Wash the potatoes and boil them in skin. While the potatoes are boiled, prepare the mayonnaise from two yolks rubbed with oil, a tablespoon of mustard (in order not to cut it), salt. If at some point, the mayonnaise becomes too thick, it will be diluted with two tablespoons of lemon juice. The soybeans ( an optional ingredient) is boiled for a few minutes in water with salt, it is drained well and left to cool. Peel the potatoes, cut them into cubes, then let them cool. The green tomatoes or the cucumbers are cut into cubes, the juice they give is drained. Place all ingredients in a bowl with the remaining mustard, add salt and pepper and put it in a cold place. It is served in bowls topped with olives and pickled peppers in thin slices.
